    Caponada

    This Ligurian specialty is tasty starter or side to any meal.

    Serves 4-6

    • A handful of salted crackers
    • ½ red onion
    • 1 tbsp black olives, pitted
    • 1 tsp capers
    • 125g tuna in olive oil
    • 2 anchovies
    • 2 tbsp white wine vinegar
    • 1 tomato
    • Water
    • Salt
    • Extra virgin olive oil

    1. Crumble the crackers into a bowl and moisten them with a little water and vinegar until soft.
    2. Chop the anchovies and olives, dice the tomato and finely slice the onion.
    3. Combine with the cracker paste and season with oil and salt to taste. Cover and refrigerate for about 2 hours before serving.
