“Spingi” (crispelle dolci)

• 4 eggs
• 4 tsp sugar
• 6 tsp vegetable oil
• 100g sultanas
• 1 apple, grated
• Juice of 1 orange
• Self-raising flour
• Oil for frying
• Icing sugar

1. Beat the eggs in a large bowl and add sugar, oil, apple and orange juice.
2. Soften the sultanas in hot water for around 15 minutes, then drain them and add to the egg mixture. Stir to combine.
3. Add the flour until you have a smooth batter.
4. Heat a large amount of oil in a pan and add a spoonful of the batter at a time.
5. Once fried, remove and drain on paper towel. Set aside to cool.
6. Dust with icing sugar and serve.
