    My mother makes these each and every year for us. This recipe was passed on from her mother and grandmother for many generations.

    • 8 eggs
    • 1kg self-raising flour
    • 250g castor sugar
    • 1 cup olive oil
    • Vanilla essence
    • Lemon rind and juice of 1 lemon

    1. Beat eggs and sugar and olive oil until it becomes a mouse.
    2. Add the sifted flour, vanilla and lemon rind and juice work until dough like.
    3. Once you make the dough roll it out and make biscuit shapes that reflect Easter buns, add hard boiled eggs in the middle and decorate with pastry strips, place on greased oven tray and bake until lightly golden.
