A sweet treat which is popular in the central Italian region of Abruzzo.

 

 

• 1/2 cup self raising flour
• 1 tsp baking powder
• 2 tbsp icing sugar
• Pinch of salt
• 2 eggs, beaten
• 1/4 cup milk
• 200g fresh ricotta
• 3 tsp orange rind
• 1 1/2 tsp lemon rind
• 1 1/2 tsp vanilla extract
• Vegetable oil, for shallow frying
• 1/4 cup sugar
• 2 tbsp honey, to serve

1. Sift flour, baking powder, icing sugar and salt into medium bowl then add rind, vanilla, eggs, milk and ricotta.
2. Set aside for 10 minutes to rest.
3. Pour oil into large deep frying pan, heat to 170°C.
4. Carefully spoon a level tablespoon of batter into the oil.
5. Cook, turning occasionally with a slotted spoon until puffed and golden.
6. Transfer fritters onto paper to drain.
7. Place sugar in bowl, toss fritters in sugar to coat all over.
8. Drizzle honey if you prefer.
