• 800g sardines, cleaned, gutted and scaled
• 350g ripe tomatoes
• Basil, finely chopped
• Parsley, finely chopped
• 1 garlic clove, finely chopped
• 5 tbsp extra virgin olive oil
1. Season the sardines with salt.
2. In large pan, heat the oil and sauté the garlic with a pinch of oregano.
3. Add the tomatoes and bring to the boil.
4. Incorporate the sardines and cook over moderate heat for around 6 minutes.
5. Season with salt, pepper, basil and parsley.
6. Serve immediately.
