• 150g ground almonds
• 150g sugar
• 2 egg whites
• Lemon rind, grated
1. Mix all the ingredients by hand to a smooth paste.
2. Refrigerate for 6 - 8 hours in a covered bowl.
3. Roll mixture into balls the size of a walnut and place on a baking tray covered in baking paper.
4. Flatten the balls slightly and sieve some icing sugar on top.
5. Cook at 180˚C until lightly coloured (about 20 minutes). Cool on the tray.
